Remember how I mentioned having Gimbap for a quick lunch at work the other day?
While Gimbap is great for takeout or rolling at home, sometimes even rolling them up can feel like too much work. When you’re looking for something even simpler, there’s an ‘abbreviated’ way to enjoy it!
You just set out the seaweed, rice, and various fillings, and everyone builds their own. It’s a fantastic way to get kids involved—they love the hands-on process, which makes them much more excited and proactive about eating their meal. So today, I’m excited to share my recipe for Simple & Easy DIY Gimbap!





<Ingredients for DIY Gimbap>
■ Seaweed sheets for Gimbap (Gim) (Sushi seaweed)
: Cut the seaweed into bite-sized pieces with scissors (cutting it into quarters is just about right).
■ 1 Cucumber, 2 Bell peppers (using different colors makes it look even better!),
Pickled radish (Danmuji, about 7-8 strips)
: Slice the vegetables into long, even strips to match the width of the seaweed.
■ 1 can of Tuna, 2-3 tablespoons of Mayonnaise, A sprinkle of sesame seeds
: Mix the ingredients together in a bowl.
■ Cooked rice, Sesame oil
: Drizzle one tablespoon of sesame oil over the warm rice and mix it well.


Once you place all the prepared ingredients on the table, you’re all set to eat!
- Place a spoonful of rice on top of a palm-sized piece of seaweed.
- Top it with the neatly sliced vegetables and pickled radish, then add the tuna mixed with mayonnaise, and you’re done!
- Now, everyone can roll their own gimbap one by one and enjoy their delicious meal.
When I prepare it this way, I always seem to have leftovers. If I have cucumber left, I’ll slice some more bell peppers to keep eating, and if I run out of pickled radish, I’ll just prep some more and keep going for a few days. ^^
But since it’s mostly fresh vegetables, I think of it as a healthy “Salad Gimbap.” It makes me feel good knowing I’m eating something so fresh and nutritious. (It’s also a great option for a vegan meal!)
It’s a fun “DIY Gimbap” that makes mealtime enjoyable because kids love the excitement of making their own. If you have children, I’m sure you’ll find it a truly happy experience to prepare and share this meal together. ;)
